Ingredients
½ cup Fine Bulgur (cracked wheat)
1 bunch (small) curly parsley (chopped very finely)
1 bunch spring (green) onion (copped bier finely)
1 small tomato chopped very finely
2 tsp lemon juice
Salt to taste
1 tsp virgin olive oil
Directions
Soak bulgur in hot boiling water for 15 minutes and drain/strain extra water add finely chopped parsley, green onion, tomatoes, salt, lemon, olive oil to bulgur. Mix well, and finally serve chilled as a salad.
Also parsley, tomatoes, green onion could be done in a food processor and then added to bulgur.
